samples: move to using CONFIG_MP_MAX_NUM_CPUS=1

For samples that set CONFIG_MP_NUM_CPUS=1, switch to using
CONFIG_MP_MAX_NUM_CPUS=1 instead as we work to phase out
CONFIG_MP_NUM_CPUS.
